The right pizza accessories make the difference between a decent homemade pizza and a result like one from a stone-oven pizzeria. Three categories work together: heat storage (pizza stone), tools for sliding in and turning (pizza peel, pizza lifter), and final portioning (pizza cutter, rocker blade).
A natural stone stores heat and releases it suddenly into the dough. On a 32 cm stone at 350-400 °C, pizza crust becomes crackling crisp instead of chewy in 60-90 seconds. Pizza stones work in conventional ovens, gas grills, and dedicated pizza ovens like the Eratec PM-27.
No real stone-oven pizza without a pizza peel. The Eratec range includes two types:
A second peel or a pizza lifter for turning and removing makes handling at 400 °C easier.
Pizza cutters with a stainless steel wheel cut through the pizza in one go without taking the topping with them. Rocker blades are the professional alternative — a single lever motion instead of rolling, with no shifting of toppings. Rocker blades are also well-suited for Turkish Lahmacun and Pide, as they cleanly divide even thin flatbreads.
Pizza stones should be cleaned dry: scrapers for crusts, brushes for flour. Never use detergent on the stone, as it will absorb the water. You can wash stainless steel tools normally, but only use a soft sponge for non-stick coatings.
All pizza accessory items in this collection are sized to fit the PM-27 pizza stone oven — natural stone diameter 32 cm, with the interior depth adjusted accordingly. They work just as well in any standard conventional oven at 230 °C or higher.
